Zeppole



Zeppole is an Italian dessert that is traditionally served during the St. Joseph’s Day feast in March, but can be enjoyed year-round. It consists of small dough balls that are deep-fried and then coated with powdered sugar. They are typically served hot and can be filled with a variety of sweet or savory fillings.

Here’s a recipe for zeppole:

Ingredients:

For the dough:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 eggs

For frying:

  • Vegetable oil
  • Powdered sugar

Instructions:

  1. In a medium saucepan, combine the water, butter, and salt. Bring the mixture to a boil over medium-high heat.
  2. Add the flour to the pan and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.
  3. Remove the pan from the heat and let it cool for a minute or two. Then, add the eggs one at a time, stirring vigorously after each addition.
  4. Fill a large saucepan with about 2 inches of vegetable oil and heat over medium-high heat.
  5. Once the oil is hot, use a small cookie scoop or a spoon to drop balls of dough into the oil. Cook the dough balls for 2-3 minutes, or until they are golden brown and cooked through.
  6. Use a slotted spoon to remove the zeppole from the oil and place them on a paper towel-lined plate to drain.
  7. Repeat with the remaining dough, being careful not to overcrowd the pan.
  8. Once all of the zeppole are fried, dust them with powdered sugar and serve them warm.
