Yayla Corbasi



Yayla Corbasi is a traditional Turkish yogurt soup that is creamy, tangy, and comforting. It is typically made with yogurt, rice, herbs, and sometimes chickpeas. Here’s a recipe to make Yayla Corbasi at home:

Ingredients:

  • 1 cup long-grain white rice
  • 6 cups chicken or vegetable broth
  • 2 cups plain yogurt
  • 3 tablespoons all-purpose flour
  • 3 eggs, lightly beaten
  • 1 tablespoon dried mint
  • 1 tablespoon dried dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (15 oz) chickpeas, drained and rinsed (optional)
  • 1 tablespoon butter

Instructions:

  1. Rinse the rice in cold water and drain.
  2. In a large pot, bring the broth and rice to a boil over high heat. Reduce the heat to low and simmer for 15-20 minutes, or until the rice is tender.
  3. In a mixing bowl, whisk together the yogurt, flour, and eggs until smooth.
  4. Add 1 cup of the hot broth to the yogurt mixture and whisk to combine. This will temper the yogurt and prevent it from curdling when added to the soup.
  5. Add the yogurt mixture to the pot and whisk to combine. Cook over low heat, stirring constantly, until the soup thickens, about 10-15 minutes.
  6. Add the dried mint, dried dill, salt, black pepper, and chickpeas (if using). Simmer for another 5-10 minutes, stirring occasionally.
  7. In a small pan, melt the butter over medium heat. When it starts to sizzle, remove from the heat.
  8. Ladle the soup into bowls and drizzle the melted butter on top.
