Tortilla soup



Tortilla soup is a classic Mexican dish that is typically made with a tomato-based broth, shredded chicken, and crispy tortilla strips. Here is a recipe for tortilla soup:

Ingredients:

  • 1 tbsp vegetable oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 1 jalapeño pepper, seeded and minced
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • 1 (28 oz) can diced tomatoes
  • 4 cups chicken broth
  • 2 cups shredded cooked chicken
  • Salt and black pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 1 avocado, diced
  • 2 cups tortilla chips

Instructions:

  1. In a large pot, heat the vegetable oil over medium-high heat. Add the chopped onion, garlic, and jalapeño pepper, and sauté until the onion is translucent, about 5 minutes.
  2. Add the ground cumin and chili powder, and stir to combine.
  3. Add the diced tomatoes and chicken broth, and bring the mixture to a simmer. Cook for about 15 minutes, until the flavors have blended together.
  4. Add the shredded cooked chicken to the pot and cook until heated through, about 5 minutes.
  5. Season the soup with salt and black pepper to taste.
  6. Ladle the soup into bowls and top with chopped cilantro, diced avocado, and tortilla chips. Serve immediately.
