Ingredients:
- 6 large ripe tomatoes
- 1 cup of cooked rice
- 1 small onion, finely chopped
- 2 cloves of garlic, minced
- 1/2 cup of chopped parsley
- 1/2 cup of chopped basil
- 1/2 cup of breadcrumbs
- 1/4 cup of grated Parmesan cheese
- Salt and pepper to taste
- Olive oil
Instructions:
- Preheat the oven to 375°F (190°C).
- Cut off the top of each tomato and scoop out the seeds and pulp with a spoon. Keep the pulp and reserve it for later use.
- In a large bowl, mix together the cooked rice, chopped onion, minced garlic, parsley, basil, breadcrumbs, and Parmesan cheese. Season the mixture with salt and pepper to taste.
- Add the reserved tomato pulp to the mixture and mix well.
- Stuff each tomato with the rice mixture, packing it down firmly. Replace the tomato tops.
- Place the stuffed tomatoes in a baking dish and drizzle with olive oil.
- Bake in the preheated oven for 45 to 50 minutes, or until the tomatoes are tender and the filling is golden brown.
- Remove the stuffed tomatoes from the oven and let them cool for a few minutes before serving.
