Sopa de Legumes

Ingredients:

  • 1 tablespoon of olive oil
  • 1 onion, diced

  • 1 zucchini, diced
  • 1 can of diced tomatoes (14.5 oz)
  • 6 cups of vegetable or chicken broth

Instructions:

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic to the pot, and cook until the onion is translucent and the garlic is fragrant, about 2-3 minutes.
  3. Add the diced carrots, celery, potatoes, and zucchini to the pot, and cook for another 5 minutes, stirring occasionally.
  4. Add the can of diced tomatoes, broth, thyme, and oregano to the pot, and stir to combine.
  5. Bring the soup to a boil, then reduce the heat to low and simmer for 20-30 minutes, or until the vegetables are tender.
  6. Season the soup with salt and black pepper to taste.
