Ingredients:
- 3 cups of cooked white rice (preferably cold, leftover rice)
- 1 lb. of raw shrimp, peeled and deveined

- 1 small onion, diced
- 1 cup of frozen peas and carrots, thawed
- 2 eggs, lightly beaten
- 3 tablespoons of soy sauce
- 1 teaspoon of sesame oil
- Salt and pepper to taste

Instructions:
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the shrimp and stir-fry for 2-3 minutes, or until they turn pink and are cooked through. Remove the shrimp from the pan and set aside.
