Satay is a popular Southeast Asian dish that typically consists of skewered and grilled meat served with a peanut sauce. The meat can vary, but it is most commonly chicken or beef. Here is a recipe for chicken satay:
Ingredients:
For the marinade:
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 pound boneless, skinless chicken thighs, cut into thin strips
For the peanut sauce:
- 1 cup creamy peanut butter
- 1/2 cup coconut milk
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
For serving:
- Bamboo skewers, soaked in water for at least 30 minutes
- Chopped cilantro and lime wedges, for garnish (optional)
Instructions:
- In a mixing bowl, whisk together the soy sauce, brown sugar, fish sauce, lime juice, vegetable oil, garlic, cumin, coriander, turmeric, and cayenne pepper. Add the chicken strips and toss to coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
- Meanwhile, prepare the peanut sauce. In a small saucepan, combine the peanut butter, coconut milk, brown sugar, soy sauce, lime juice, garlic, cumin, and cayenne pepper. Heat over low heat, stirring constantly, until the mixture is smooth and well combined. Keep warm over low heat until ready to serve.
- Preheat a grill or grill pan to medium-high heat.
- Thread the chicken strips onto the soaked skewers, leaving a small amount of space between each piece.
- Grill the chicken skewers for 4-5 minutes per side, or until cooked through and lightly charred.
- Serve the chicken satay hot with the warm peanut sauce and garnish with chopped cilantro and lime wedges, if desired.
Enjoy your delicious and flavorful chicken satay with the rich and creamy peanut sauce!
