Sarapatel



Sarapatel is a popular Goan dish that is made with pork offal, spices, and vinegar. It is typically served as a main course with rice or bread. Here’s a recipe you can try at home:

Ingredients:

  • 1 lb pork liver
  • 1 lb pork heart
  • 1 lb pork kidneys
  • 1/2 cup vinegar
  • 2 onions, chopped
  • 2 tbsp ginger-garlic paste
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp black pepper
  • Salt, to taste
  • Oil, for frying

Instructions:

  1. Wash and clean the pork liver, heart, and kidneys. Cut them into small pieces and set aside.
  2. In a large pot, heat 2-3 tablespoons of oil over medium heat.
  3. Add the chopped onions and fry until they are translucent.
  4. Add the ginger-garlic paste and fry for another minute.
  5. Add the pork offal pieces and fry for 5-7 minutes until they are lightly browned.
  6. Add the cumin powder, coriander powder, turmeric powder, red chili powder, black pepper, and salt. Mix well.
  7. Add the vinegar and 1 cup of water. Mix well and bring the mixture to a boil.
  8. Lower the heat, cover the pot, and simmer for 45-60 minutes, stirring occasionally, until the offal is tender.
  9. Remove the lid and continue to simmer the mixture until the gravy thickens.
  10. Serve hot with rice or bread.
