Salade Niçoise



Salade Niçoise is a classic French salad that originated in the city of Nice, located on the French Riviera. It is a refreshing and colorful dish that is perfect for warm weather.

Ingredients:

  • 2 cans of tuna in water, drained
  • 4 hard-boiled eggs, peeled and quartered
  • 1/2 lb green beans, trimmed and blanched
  • 4 small new potatoes, boiled and sliced
  • 1/2 red onion, thinly sliced
  • 2 large ripe tomatoes, cut into wedges
  • 1/2 cup niçoise olives
  • 4 cups mixed salad greens
  • Salt and black pepper

For the vinaigrette:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove, minced
  • Salt and black pepper

Instructions:

  1. In a large bowl, toss the salad greens with a few tablespoons of the vinaigrette.
  2. Arrange the tuna, eggs, green beans, potatoes, onion, tomatoes, and olives on top of the greens.
  3. Drizzle the remaining vinaigrette over the salad and season with salt and black pepper to taste.
  4. Serve the Salade Niçoise immediately, garnished with additional niçoise olives and a lemon wedge, if desired.

For the vinaigrette:

  1. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, and garlic.
  2. Season with salt and black pepper to taste.
  3. Set the vinaigrette aside until ready to use.
