Rogan Josh



Rogan Josh is a popular Kashmiri dish that is known for its rich and flavorful sauce made with a blend of aromatic spices. It is typically made with lamb or goat, but can also be made with chicken or beef.

Ingredients:

  • 2 pounds boneless lamb, cut into bite-sized pieces
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons vegetable oil
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 2 teaspoons ground turmeric
  • 2 teaspoons paprika
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cloves
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 cups water
  • 1 cup plain yogurt
  • 2 tablespoons chopped fresh cilantro

Instructions:

  1. Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
  2. Add the chopped onions and sauté for 2-3 minutes, until softened.
  3. Add the minced garlic and grated ginger to the pot and sauté for another minute.
  4. Add the lamb to the pot and cook for 5-7 minutes, until browned on all sides.
  5. Add the ground coriander, cumin, turmeric, paprika, cinnamon, cardamom, cloves, chili powder, salt, and pepper to the pot, and stir well to combine.
  6. Pour in the water and bring the mixture to a boil.
  7. Reduce the heat and let the lamb simmer for 1-2 hours, until the meat is tender and the sauce has thickened.
  8. Stir in the plain yogurt and let the mixture simmer for an additional 10-15 minutes.
  9. Garnish the Rogan Josh with chopped fresh cilantro and serve hot with rice or naan bread.
