Roast chicken

Ingredients:

  • 1 whole chicken (approximately 4-5 pounds or 1.8-2.3 kilograms)

  • Optional stuffing ingredients: lemon wedges, onion wedges, garlic cloves, fresh herbs

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Remove any giblets or neck from the chicken cavity, if present. Pat the chicken dry with paper towels.
  3. Season the chicken generously with salt and pepper, both inside the cavity and on the skin. You can also add additional seasonings such as garlic powder, paprika, or dried herbs if desired.
  4. Optional step: If you want to stuff the chicken, you can place lemon wedges, onion wedges, garlic cloves, or fresh herbs inside the cavity to add flavor.
  5. Rub the softened butter or olive oil all over the chicken, ensuring it is evenly coated. This will help to create a crispy and golden skin.
  6. Place the chicken on a roasting rack or in a roasting pan. If using a rack, make sure to place it inside a roasting pan to catch any drippings.
  7. Roast the chicken in the preheated oven for about 20 minutes per pound (45 minutes per kilogram), plus an additional 15-20 minutes. For example, a 4-pound chicken would take approximately 1 hour and 20 minutes to 1 hour and 30 minutes to cook.
  8. Check the internal temperature of the chicken using a meat thermometer inserted into the thickest part of the thigh without touching the bone. The chicken is done when the temperature reaches 165°F (74°C).
  9. Once the chicken is cooked, remove it from the oven and let it rest for about 10-15 minutes before carving. This allows the juices to redistribute, resulting in a juicier chicken.
  10. Carve the roast chicken by separating the legs, wings, and breast meat. Serve it with your favorite side dishes such as roasted vegetables, mashed potatoes, or a fresh salad.
