Ingredients:

  • 1 tablespoon vegetable oil
  • 2 tablespoons red curry paste

  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small onion, sliced
  • 1 cup sliced mushrooms
  • 1 lb chicken breast or tofu, cubed
  • Fresh basil leaves, for garnish

Instructions:

  1. In a large pot or wok, heat the vegetable oil over medium-high heat.
  2. Add the red curry paste and stir-fry for 1-2 minutes until fragrant.
  3. Add the coconut milk, chicken or vegetable broth, fish sauce, and brown sugar. Stir well to combine and bring to a simmer.
  4. Add the sliced bell peppers, onion, and mushrooms. Stir to combine and simmer for 5 minutes until the vegetables are tender.
  5. Add the cubed chicken breast or tofu to the pot and simmer for an additional 5-10 minutes, until the protein is cooked through.
  6. Serve the red curry hot, garnished with fresh basil leaves.
