Polpette

Polpette are Italian meatballs that are usually made with ground beef, veal, or pork, and flavored with herbs, cheese, and breadcrumbs. They can be served as a main dish or as an appetizer, and can be served with tomato sauce or in a sandwich.

Here’s a recipe for polpette:

Ingredients:

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 egg, lightly beaten
  • Salt and pepper, to taste
  • Olive oil, for frying

Instructions:

  1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, garlic, egg, salt, and pepper. Use your hands to mix the ingredients together until they are well combined.
  2. Shape the mixture into small meatballs, about 1-2 inches in diameter.
  3. Heat a large skillet over medium-high heat and add enough olive oil to coat the bottom of the pan.
  4. Once the oil is hot, add the meatballs to the pan, being careful not to overcrowd them.
  5. Cook the meatballs for 3-4 minutes per side, or until they are browned and cooked through.
  6. Remove the meatballs from the pan and place them on a paper towel-lined plate to drain off any excess oil.
  7. Serve the meatballs hot with tomato sauce, or use them to make a sandwich.
