Pamonha



Pamonha is a traditional Brazilian dish made with fresh corn and milk. It is a sweet and savory delicacy that is especially popular in the northern and central regions of Brazil. Pamonha is typically served as a dessert or a snack, and is often enjoyed during festivals and celebrations.

To make pamonha, fresh corn kernels are removed from the cob and blended with milk, sugar, and butter to form a smooth batter. Here is a simple recipe for pamonha:

Ingredients:

  • 8 ears of fresh corn, husked and cleaned
  • 1 cup of milk
  • 1/2 cup of sugar
  • 4 tablespoons of unsalted butter, melted
  • Salt to taste
  • Corn husks

Instructions:

  1. Preheat a large pot of water on medium heat.
  2. In a blender, puree the corn kernels with milk, sugar, butter, and salt until smooth.
  3. Take a corn husk and spoon about 2-3 tablespoons of the corn mixture onto the center of the husk.
  4. Fold the husk over the corn mixture, then fold the bottom of the husk over the top.
  5. Tie the husk with kitchen string, then trim the excess string and husk.
  6. Repeat with the remaining husks and corn mixture.
  7. Place the pamonhas in the pot of boiling water and cook for 45 minutes, or until the corn mixture is cooked through.
  8. Remove the pamonhas from the water and allow them to cool for a few minutes.
  9. Unwrap the pamonhas from their husks and serve warm.
