Pambazos



Pambazos are a type of Mexican sandwich that originated in the state of Mexico. The sandwich is made with a soft bread roll that is first dipped in a spicy red guajillo pepper sauce and then stuffed with a filling of potatoes and chorizo, lettuce, cream, and crumbled cheese. Here is a recipe for making pambazos:

Ingredients: For the bread:

  • 6 soft bread rolls (pambazos)
  • 6 dried guajillo peppers
  • 2 cloves garlic
  • 1/2 onion, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup water
  • 2 tablespoons vegetable oil

For the filling:

  • 4 potatoes, peeled and diced
  • 1/2 lb chorizo sausage, removed from casing
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup shredded lettuce
  • 1/2 cup crumbled queso fresco (or feta cheese)
  • 1/2 cup Mexican crema (or sour cream)

Instructions:

  1. Preheat the oven to 350°F.
  2. To make the bread, remove the stems and seeds from the guajillo peppers and soak them in hot water for 20 minutes until softened. Drain the peppers and place them in a blender with the garlic, onion, oregano, cumin, salt, pepper, and water. Blend until smooth.
  3. Heat the oil in a large frying pan over medium-high heat. Dip each bread roll into the guajillo pepper sauce, making sure it is fully coated. Fry the bread rolls in the hot oil for a few minutes on each side until lightly golden brown. Remove from the pan and set aside.
  4. To make the filling, boil the potatoes in a pot of salted water until they are tender. Drain and set aside.
  5. In a separate pan, cook the chorizo over medium heat until browned, breaking it up with a wooden spoon. Add the chopped onion and minced garlic and cook for a few more minutes until the onion is softened. Add the cooked potatoes, oregano, salt, and pepper and stir to combine.
  6. To assemble the pambazos, slice each bread roll in half lengthwise. Fill each roll with the potato-chorizo mixture, shredded lettuce, crumbled cheese, and a drizzle of Mexican crema. Close the sandwich and wrap it tightly in aluminum foil.
  7. Place the wrapped pambazos on a baking sheet and bake in the preheated oven for 10-15 minutes, or until heated through and the cheese is melted.
  8. Unwrap the pambazos and serve hot. Enjoy!
