Ingredients: For the bread:
- 6 soft bread rolls (pambazos)
- 6 dried guajillo peppers
- 2 cloves garlic
- 1/2 onion, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup water
- 2 tablespoons vegetable oil
For the filling:
- 4 potatoes, peeled and diced
- 1/2 lb chorizo sausage, removed from casing
- 1/2 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup shredded lettuce
- 1/2 cup crumbled queso fresco (or feta cheese)
- 1/2 cup Mexican crema (or sour cream)
Instructions:
- Preheat the oven to 350°F.
- To make the bread, remove the stems and seeds from the guajillo peppers and soak them in hot water for 20 minutes until softened. Drain the peppers and place them in a blender with the garlic, onion, oregano, cumin, salt, pepper, and water. Blend until smooth.
- Heat the oil in a large frying pan over medium-high heat. Dip each bread roll into the guajillo pepper sauce, making sure it is fully coated. Fry the bread rolls in the hot oil for a few minutes on each side until lightly golden brown. Remove from the pan and set aside.
- To make the filling, boil the potatoes in a pot of salted water until they are tender. Drain and set aside.
