Shrimp and Scallop Ceviche

Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 1 pound large sea scallops, trimmed and sliced thinly
  • 1 red onion, finely diced
  • 2 large tomatoes, finely diced
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/2 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Tortilla chips or tostadas, for serving

Instructions:

  1. Cut the shrimp and scallops into small pieces and place them in a large bowl.
  2. Add the red onion, tomatoes, and jalapeño pepper to the bowl, and toss to combine.
  3. In a small bowl, whisk together the lime juice, orange juice, cilantro, olive oil, salt, and pepper to make the dressing.
  4. Pour the dressing over the seafood mixture and toss to coat.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours.
