Mango Sticky Rice

Ingredients:

  • 1 cup glutinous rice (also known as sticky rice)
  • 1 can coconut milk
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 2 ripe mangoes, peeled and sliced
  • Toasted sesame seeds (optional)

Instructions:

  1. Rinse the glutinous rice in cold water until the water runs clear. Soak the rice in cold water for at least 30 minutes or up to 4 hours.
  2. Drain the rice and transfer it to a saucepan with 1 1/4 cups of water. Bring to a boil over high heat, then reduce the heat to low and cover the saucepan. Simmer for 15-20 minutes or until the rice is cooked and all the water has been absorbed.
  3. In a separate saucepan, heat the coconut milk, sugar, and salt over medium heat until the sugar has dissolved. Do not allow the mixture to boil.
  4. Once the rice is cooked, remove it from the heat and pour half of the coconut milk mixture over the rice. Stir to combine, then cover the saucepan and let the rice sit for 10-15 minutes to allow the coconut milk to be absorbed.
  5. To serve, spoon the rice onto a serving plate and top with sliced mangoes. Drizzle the remaining coconut milk mixture over the top and sprinkle with toasted sesame seeds if desired.
