Malai kofta



Malai Kofta is a popular North Indian dish that is made with paneer and potato dumplings in a creamy tomato-based sauce. It is a vegetarian dish that is loved by many and is often served at special occasions or festive events.

Ingredients:

For the koftas:

  • 2 cups crumbled paneer
  • 2 cups boiled, mashed potatoes
  • 1/2 cup bread crumbs
  • 1/4 cup finely chopped cashews
  • 1/4 cup raisins
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • Salt, to taste
  • Oil, for frying

For the sauce:

  • 1 tablespoon oil
  • 1 onion, finely chopped
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 2 cups tomato puree
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • Salt, to taste
  • 1/2 cup heavy cream
  • Fresh cilantro, for garnish

Instructions:

  1. To make the koftas, combine the crumbled paneer, mashed potatoes, bread crumbs, chopped cashews, raisins, ginger paste, garlic paste, cardamom, cinnamon, and salt in a bowl. Mix well to combine.
  2. Shape the mixture into small balls or oval-shaped dumplings.
  3. Heat the oil in a deep frying pan over medium heat.
  4. Fry the koftas until golden brown on all sides. Remove from the oil and place them on paper towels to drain the excess oil.
  5. To make the sauce, heat the oil in a separate pan over medium heat.
  6. Add the finely chopped onion and sauté for 2-3 minutes until softened.
  7. Add the ginger paste and garlic paste and sauté for another minute.
  8. Add the tomato puree to the pan and stir well.
  9. Add the ground coriander, cumin, paprika, garam masala, and salt to the pan and stir well to combine.
  10. Let the mixture simmer for 10-15 minutes, until the sauce has thickened and the flavors have blended together.
  11. Stir in the heavy cream and mix well.
  12. Add the fried koftas to the sauce and simmer for another 2-3 minutes.
  13. Garnish the Malai Kofta with fresh cilantro and serve hot with rice or naan bread.
