Kunefe, also known as Künefe or Kanafeh, is a popular Middle Eastern and Mediterranean dessert. It is a sweet and cheesy pastry that is typically made with shredded phyllo dough, melted butter, soft cheese, and a sweet syrup. Here’s a recipe to make Kunefe at home:
Ingredients:
For the syrup:
- 1 cup granulated sugar
- 1 cup water
- 1 tablespoon lemon juice
- 1/2 teaspoon orange blossom water (optional)
For the pastry:
- 1 package (16 oz) shredded phyllo dough (also called kataifi)
- 1/2 cup unsalted butter, melted
- 2 cups crumbled unsalted cheese, such as mozzarella or ricotta
- 1/4 cup chopped pistachios, for garnish (optional)
Instructions:
- To make the syrup, combine the sugar, water, and lemon juice in a small saucepan. Bring to a boil over medium-high heat, stirring occasionally, until the sugar has dissolved.
- Reduce the heat to low and simmer the syrup for 10-15 minutes, or until it thickens slightly. Remove from heat and stir in the orange blossom water, if using. Set aside to cool.
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, separate the shredded phyllo dough into small pieces with your fingers. Add the melted butter and mix well to coat.
- Press half of the phyllo mixture into a 9-inch (23 cm) round baking dish, making sure to cover the bottom and sides evenly.
- Spread the crumbled cheese over the phyllo layer, leaving a 1/2-inch (1.25 cm) border around the edge.
- Cover the cheese layer with the remaining phyllo mixture, pressing down gently to seal the edges.
- Bake the Kunefe for 25-30 minutes, or until golden brown on top.
- Remove the baking dish from the oven and let it cool for 5-10 minutes.
- Pour the cooled syrup evenly over the Kunefe, allowing it to soak in.
- Garnish with chopped pistachios, if desired.
