Kimchi-jjigae is a popular Korean stew that is made with kimchi, pork, tofu, and various vegetables. It is a spicy and flavorful dish that is perfect for a cold day or any time you’re in the mood for a hearty, comforting meal.
Ingredients:
- 2 cups chopped kimchi
- 1/2 pound pork belly or pork shoulder, cut into small pieces
- 2 cups water or beef broth
- 1 block of firm tofu, cut into cubes
- 1 onion, sliced
- 2 garlic cloves, minced
- 2 green onions, chopped
- 1 tablespoon gochujang (Korean red pepper paste)
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
Instructions:
- Heat the vegetable oil in a large pot over medium heat. Add the pork and cook until browned, about 5-7 minutes.
- Add the sliced onions and minced garlic to the pot and sauté for 2-3 minutes, until the onions are softened.
- Add the chopped kimchi, gochujang, soy sauce, and water or beef broth to the pot. Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes.
- Add the cubed tofu and simmer for another 5-7 minutes, until the tofu is heated through.
- Stir in the chopped green onions and sesame oil, and season with salt and pepper to taste.
- Serve the Kimchi-jjigae hot with steamed rice.
