Khao Soi



Khao Soi is a delicious noodle soup that is popular in Northern Thailand and Myanmar. It is typically made with a rich and creamy coconut milk broth, tender noodles, and a variety of flavorful toppings. Here is a recipe for Khao Soi:

Ingredients:

For the Curry Paste:

  • 4 dried red chilies
  • 1 tablespoon of coriander seeds
  • 1 tablespoon of cumin seeds
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of shrimp paste
  • 4 garlic cloves, minced
  • 1 small onion, chopped
  • 1/4 cup of chopped cilantro stems

For the Soup:

  • 1 pound of chicken thighs, cut into small pieces
  • 2 cans of coconut milk
  • 4 cups of chicken stock
  • 2 tablespoons of fish sauce
  • 1 tablespoon of palm sugar
  • 1 tablespoon of tamarind paste
  • 1 pound of egg noodles
  • 2 tablespoons of vegetable oil
  • 2 cups of chopped vegetables (such as onions, carrots, and bell peppers)
  • 1/4 cup of chopped cilantro leaves
  • 1 lime, cut into wedges

Instructions:

  1. In a dry skillet, toast the dried red chilies, coriander seeds, and cumin seeds over medium heat until fragrant, about 1-2 minutes. Transfer to a mortar and pestle and grind into a fine powder.
  2. Add the turmeric powder, shrimp paste, garlic, onion, and cilantro stems to the mortar and pestle and pound into a smooth paste.
  3. In a large pot, heat the vegetable oil over medium-high heat. Add the curry paste and cook, stirring constantly, for 2-3 minutes until fragrant.
  4. Add the chicken pieces to the pot and cook for 5-7 minutes, or until browned on all sides.
  5. Add the coconut milk, chicken stock, fish sauce, palm sugar, and tamarind paste to the pot. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  6. While the soup is simmering, cook the egg noodles according to the package directions.
  7. In a separate pan, sauté the chopped vegetables until tender.
  8. To serve, place a serving of noodles in each bowl and ladle the soup over the noodles. Top with the sautéed vegetables, chopped cilantro leaves, and a squeeze of lime juice.
