Katsu curry



Katsu curry is a popular Japanese dish consisting of breaded and fried chicken or pork, served with a thick curry sauce and rice. It is a delicious and satisfying meal that is easy to make at home.

Ingredients:

  • 4 boneless, skinless chicken thighs or pork chops
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 2 tablespoons vegetable oil
  • 2 cups cooked white rice

For the curry sauce:

  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 2 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 2 tablespoons all-purpose flour
  • 2 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 400°F.
  2. To make the curry sauce, heat the vegetable oil in a large saucepan over medium heat. Add the chopped onion, minced garlic, and grated ginger, and sauté for 2-3 minutes until the onion is translucent.
  3. Add the curry powder and flour to the pan and stir to combine. Cook for another minute, stirring constantly.
  4. Gradually add the chicken or vegetable broth to the pan, whisking constantly to prevent lumps. Bring the mixture to a simmer and cook for 10-15 minutes, until the sauce has thickened.
  5. Stir in the soy sauce, honey, salt, and pepper, and keep the sauce warm over low heat.
  6. To prepare the chicken or pork, season the meat with salt and pepper. Dredge the meat in the flour, then dip it in the beaten eggs, and coat it with the panko breadcrumbs.
  7. Heat the vegetable oil in a large skillet over medium-high heat. Add the breaded meat and cook for 3-4 minutes on each side, until golden brown.
  8. Transfer the meat to a baking sheet and bake in the oven for 10-12 minutes, until cooked through.
  9. Serve the katsu curry hot, with a generous spoonful of curry sauce and a side of white rice.
