Hot and Sour Soup



Hot and sour soup is a popular Chinese soup that has a tangy and spicy flavor. It is usually made with a combination of ingredients such as vegetables, mushrooms, tofu, meat, and a spicy broth made with vinegar and chili oil.

Ingredients:

  • 6 cups chicken or vegetable broth
  • 1/2 cup bamboo shoots, sliced
  • 1/2 cup carrots, julienned
  • 1/2 cup shiitake mushrooms, sliced
  • 1/2 cup tofu, cubed
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon chili oil
  • 1 tablespoon cornstarch
  • 2 eggs, lightly beaten
  • Salt and black pepper
  • Green onions, chopped (for garnish)

Instructions:

  1. In a large pot, bring the chicken or vegetable broth to a boil.
  2. Add the bamboo shoots, carrots, shiitake mushrooms, and tofu to the pot. Cook for about 5 minutes or until the vegetables are tender.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, chili oil, and cornstarch. Add the mixture to the pot and stir well.
  4. Reduce the heat to medium-low and slowly pour the beaten eggs into the soup, stirring gently in one direction. The eggs should form thin ribbons in the soup.
  5. Season the soup with salt and black pepper to taste.
  6. Serve the hot and sour soup hot, garnished with chopped green onions.
