Ingredients:
- 1 cup dried chickpeas, soaked overnight
- 1/2 cup dried lentils
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 1 teaspoon ground ginger
- 1/2 teaspoon turmeric
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cayenne pepper
- 1 can diced tomatoes
- 1/2 cup chopped fresh cilantro
- 1/2 cup chopped fresh parsley
- 6 cups chicken or vegetable broth
- Salt and pepper, to taste
- Lemon wedges, for serving
Instructions:
- Drain and rinse the soaked chickpeas, and place them in a large pot along with the lentils, onion, garlic, olive oil, and spices. Stir to combine.
- Add the diced tomatoes, cilantro, parsley, and broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for about an hour, or until the chickpeas and lentils are tender.
- Season the soup with salt and pepper to taste. Ladle the soup into bowls and serve with lemon wedges on the side.
