Harira



Harira is a traditional Moroccan soup that is typically served during Ramadan to break the fast at sunset. It is a hearty and nutritious soup that is made with lentils, chickpeas, tomatoes, and spices. Harira can be served as a meal on its own or as a side dish.

Ingredients:

  • 1 cup dried chickpeas, soaked overnight
  • 1/2 cup dried lentils
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 can diced tomatoes
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped fresh parsley
  • 6 cups chicken or vegetable broth
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions:

  1. Drain and rinse the soaked chickpeas, and place them in a large pot along with the lentils, onion, garlic, olive oil, and spices. Stir to combine.
  2. Add the diced tomatoes, cilantro, parsley, and broth to the pot. Bring the mixture to a boil, then reduce the heat to low and simmer for about an hour, or until the chickpeas and lentils are tender.
  3. Season the soup with salt and pepper to taste. Ladle the soup into bowls and serve with lemon wedges on the side.
