Galinhada

Ingredients:

  • 2 lbs bone-in chicken thighs, skin removed
  • 2 cups white rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 tomatoes, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup frozen peas

  • 2 tsp ground turmeric

Instructions:

  1. In a large pot or Dutch oven, heat the olive oil and butter over medium heat.
  2. Add the chicken thighs to the pot and cook for 10-12 minutes until they are golden brown on both sides. Remove the chicken from the pot and set it aside on a plate.
  3. In the same pot, add the onions and garlic and cook for 2-3 minutes until they are softened.
  4. Add the chopped tomatoes and bell peppers to the pot and cook for 5-7 minutes until the vegetables are soft and fragrant.
  5. Add the rice, turmeric, salt, and black pepper to the pot and stir well to combine.
  6. Add the chicken broth to the pot and stir again. Bring the mixture to a boil.
  7. Return the chicken thighs to the pot, nestling them in the rice mixture.
  8. Reduce the heat to low, cover the pot, and let the mixture simmer for 20-25 minutes until the rice is cooked and the chicken is tender.
  9. Stir in the frozen peas and fresh cilantro and let the mixture cook for another 5-10 minutes until the peas are heated through.
  10. Serve hot, garnished with additional cilantro if desired.
