Fondue savoyarde



Fondue savoyarde, also known as cheese fondue, is a traditional dish from the French region of Savoy. It is a melted cheese dish served with bread, potatoes, and sometimes charcuterie. Here is a simple recipe to make fondue savoyarde at home:

Ingredients:

  • 1 pound of cheese (ideally a mixture of Gruyère and Emmental), grated
  • 1 clove of garlic, peeled and halved
  • 1 cup of dry white wine
  • 1 tablespoon of cornstarch
  • 1 tablespoon of kirsch (optional)
  • Freshly ground black pepper

For serving:

  • A baguette, cut into bite-sized pieces
  • Boiled potatoes, cut into bite-sized pieces
  • Charcuterie (such as ham, salami, or prosciutto), cut into bite-sized pieces

Instructions:

  1. Rub the inside of a fondue pot with the cut sides of the garlic clove.
  2. In a medium-sized bowl, mix the grated cheese with the cornstarch.
  3. Pour the white wine into the fondue pot and heat over medium heat until it starts to bubble.
  4. Reduce the heat to low and gradually add the cheese mixture, stirring constantly until the cheese is melted and the mixture is smooth.
  5. Add the kirsch (if using) and a pinch of black pepper to the fondue and stir well.
  6. Adjust the heat to keep the fondue warm and liquid.
  7. Serve with the baguette, boiled potatoes, and charcuterie for dipping.
