Fondue savoyarde, also known as cheese fondue, is a traditional dish from the French region of Savoy. It is a melted cheese dish served with bread, potatoes, and sometimes charcuterie. Here is a simple recipe to make fondue savoyarde at home:
Ingredients:
- 1 pound of cheese (ideally a mixture of Gruyère and Emmental), grated
- 1 clove of garlic, peeled and halved
- 1 cup of dry white wine
- 1 tablespoon of cornstarch
- 1 tablespoon of kirsch (optional)
- Freshly ground black pepper
For serving:
- A baguette, cut into bite-sized pieces
- Boiled potatoes, cut into bite-sized pieces
- Charcuterie (such as ham, salami, or prosciutto), cut into bite-sized pieces
Instructions:
- Rub the inside of a fondue pot with the cut sides of the garlic clove.
- In a medium-sized bowl, mix the grated cheese with the cornstarch.
- Pour the white wine into the fondue pot and heat over medium heat until it starts to bubble.
- Reduce the heat to low and gradually add the cheese mixture, stirring constantly until the cheese is melted and the mixture is smooth.
- Add the kirsch (if using) and a pinch of black pepper to the fondue and stir well.
- Adjust the heat to keep the fondue warm and liquid.
- Serve with the baguette, boiled potatoes, and charcuterie for dipping.
To enjoy the fondue, simply dip the bread, potatoes, and charcuterie into the melted cheese mixture using a fondue fork. Enjoy your homemade fondue savoyarde!
