Fattoush



Fattoush is a traditional Lebanese salad that is made with fresh vegetables, toasted pita bread, and a tangy dressing made with lemon juice and sumac. It is a light and refreshing salad that is perfect for a summer meal or as a side dish to a heavier meal.

Ingredients:

  • 2 medium tomatoes, chopped
  • 1 small cucumber, chopped
  • 1 green bell pepper, chopped
  • 1/2 red onion, thinly sliced
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • 2 pieces of pita bread, toasted and broken into small pieces
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon sumac
  • Salt and pepper, to taste

Instructions:

  1. In a large bowl, combine the chopped tomatoes, cucumber, bell pepper, red onion, parsley, mint, and cilantro.
  2. Add the toasted pita bread pieces to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, sumac, salt, and pepper to make the dressing.
  4. Pour the dressing over the salad and toss to combine.
  5. Serve the fattoush immediately or let it sit for a little while to allow the flavors to meld together.
