Croquetas

Croquetas, also known as croquettes, are a popular Spanish appetizer that is enjoyed all over the world. These small, fried bites are typically made with a creamy bechamel sauce mixed with a variety of fillings such as ham, cheese, chicken, or vegetables. The result is a crispy outer shell with a creamy and savory interior.

Ingredients:

  • 2 cups of milk
  • 4 tablespoons of butter
  • 4 tablespoons of flour
  • 1 cup of finely chopped ham
  • Salt and pepper to taste
  • 1/4 teaspoon of nutmeg
  • 1/2 cup of breadcrumbs
  • 1 egg, beaten
  • Vegetable oil for frying

Instructions:

  1. In a medium saucepan, heat the milk over medium heat until it is hot but not boiling.
  2. In another saucepan, melt the butter over low heat. Once melted, add the flour and whisk until smooth. Cook for about 2 minutes, stirring constantly.
  3. Slowly add the hot milk to the butter and flour mixture, whisking constantly to prevent lumps. Cook over medium heat, stirring constantly until the mixture thickens, about 10 minutes.
  4. Add the chopped ham, salt, pepper, and nutmeg to the mixture and stir until well combined. Remove from heat and let cool for about 30 minutes.
  5. Once the mixture has cooled, shape the croquetas by taking a spoonful of the mixture and rolling it into a small ball or oval shape. Place the croquetas on a plate and refrigerate for at least 1 hour.
  6. In a shallow dish, beat the egg. In another shallow dish, place the breadcrumbs.
  7. Heat enough vegetable oil in a frying pan to cover the croquetas. Once the oil is hot, dip each croqueta into the beaten egg and then into the breadcrumbs, making sure it is well coated.
  8. Fry the croquetas in the hot oil until they are golden brown on all sides, about 2-3 minutes. Remove from the oil with a slotted spoon and place on a plate lined with paper towels to absorb any excess oil.
  9. Serve hot and enjoy!

Croquetas are a versatile appetizer that can be served as a snack, tapa, or even as part of a main course. They can be made ahead of time and stored in the refrigerator for up to 3 days or in the freezer for up to a month.
