Chicken kadai



Chicken Kadai is a popular Indian dish made with tender chicken pieces cooked in a flavorful tomato-based sauce with onions, bell peppers, and aromatic spices. Here’s a recipe you can try at home:

Ingredients:

  • 500g chicken, cut into bite-sized pieces
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 tomatoes, chopped
  • 2 green chilies, chopped
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 1 tsp garam masala powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • Salt, to taste
  • 2 tbsp oil
  • Fresh coriander leaves, chopped, for garnish

Instructions:

  1. In a small frying pan, dry roast the cumin and coriander seeds until fragrant. Let them cool, then grind them into a fine powder using a spice grinder or mortar and pestle.
  2. Heat the oil in a large, deep pan over medium-high heat. Add the onions and fry until they are translucent and lightly browned, about 5-6 minutes.
  3. Add the ginger and garlic paste and fry for another minute until fragrant.
  4. Add the chopped tomatoes and green chilies and cook until the tomatoes break down and turn into a thick sauce, about 5-6 minutes.
  5. Add the ground cumin and coriander powder, garam masala powder, turmeric powder, red chili powder, and salt to the pan. Stir well to combine all the spices.
  6. Add the chicken pieces to the pan and cook for 10-12 minutes until they are browned on all sides.
  7. Add the chopped bell peppers to the pan and continue to cook for another 5-6 minutes until the chicken is cooked through and the bell peppers are tender.
  8. Garnish the chicken kadai with fresh coriander leaves and serve hot with rice or bread.
