Chicken curry



Chicken curry is a popular dish in many parts of the world, known for its flavorful blend of spices and tender chicken. Here is a simple recipe for making chicken curry at home:
Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons vegetable oil
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 cup canned diced tomatoes, drained
  • 1 cup chicken broth
  • 1 cup coconut milk
  • Salt and black pepper, to taste
  • Chopped fresh cilantro, for garnish

Instructions:

  1. In a large saucepan or Dutch oven, heat the vegetable oil over medium heat.
  2. Add the chopped onion to the pan and sauté for 5-7 minutes, or until it is softened and translucent.
  3. Add the minced garlic and grated ginger to the pan and cook for 1-2 minutes, stirring constantly.
  4. Add the curry powder, cumin, cinnamon, and cayenne pepper to the pan and stir to combine.
  5. Add the diced tomatoes, chicken broth, and coconut milk to the pan and stir to combine.
  6. Add the chicken pieces to the pan and stir to coat them in the curry sauce.
  7. Bring the curry to a simmer and cook for 20-25 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  8. Season the curry with salt and black pepper to taste.
  9. Serve the chicken curry hot, garnished with chopped fresh cilantro.

Optional additions:

  • Diced potatoes, carrots or other vegetables for added texture and nutrition
  • Cashew or almond butter to add creaminess
  • Yogurt or sour cream for added tanginess
