Cheesecake

Cheesecake is a rich, decadent dessert that is perfect for special occasions or just for indulging yourself. Here is a simple recipe for a classic cheesecake:
Ingredients:
For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

For the filling:

  • 4 (8-ounce) packages cream cheese, at room temperature
  • 1 1/4 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 4 large eggs, at room temperature
  • 1/3 cup heavy cream

Instructions:

  1. Preheat the oven to 350°F. Grease a 9-inch springform pan.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until well combined.
  3. Press the mixture into the bottom and up the sides of the prepared springform pan. Use the bottom of a measuring cup or glass to help press the mixture evenly into the pan.
  4. Bake the crust for 10 minutes, then remove from the oven and let cool while you prepare the filling.
  5. In a large bowl, beat together the cream cheese, sugar, and vanilla extract until smooth and creamy.
  6. Add the eggs one at a time, beating well after each addition.
  7. Stir in the heavy cream.
  8. Pour the filling into the prepared crust.
  9. Bake for 45-50 minutes, or until the center is just set and the edges are lightly golden.
  10. Remove the cheesecake from the oven and let it cool completely on a wire rack.
  11. Once the cheesecake is cool, cover and refrigerate for at least 2 hours, or overnight.
  12. Before serving, run a knife around the edge of the cheesecake to loosen it from the pan.
  13. Remove the sides of the springform pan.
  14. Slice and serve your delicious homemade cheesecake!

Optional toppings:

  • Fresh berries (strawberries, blueberries, raspberries)
