Camarones al ajillo

Ingredients:

  • 1 lb large shrimp, peeled and deveined
  • 6 garlic cloves, minced
  • 1/4 cup olive oil
  • 1/4 cup dry white wine
  • 1/4 cup chicken or seafood broth
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp red pepper flakes
  • Salt and black pepper, to taste

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
  2. Increase the heat to medium-high and add the shrimp to the skillet. Cook for 2-3 minutes on each side until they turn pink.
  3. Remove the shrimp from the skillet and set aside.
  4. Add the white wine and broth to the skillet, and cook for 2-3 minutes until the sauce has reduced by half.
  5. Add the cooked shrimp back to the skillet and stir well to coat them with the sauce. Cook for 1-2 more minutes until heated through.
  6. Season with salt and black pepper to taste, and sprinkle with chopped parsley.
  7. Serve the garlic shrimp hot, with crusty bread or over rice.
