Braciole



Braciole, also known as involtini, is an Italian dish consisting of thin slices of beef that are rolled up with a filling of cheese, breadcrumbs, herbs, and sometimes other ingredients. Here’s a recipe you can try at home:

Ingredients:

  • 6 thin slices of beef (such as top round or flank steak), pounded to an even thickness
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 6 toothpicks or kitchen twine
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup red wine
  • 1 tsp dried oregano
  • Salt and black pepper, to taste

Instructions:

  1. In a small bowl, mix together the breadcrumbs, Parmesan cheese, parsley, garlic, salt, and black pepper.
  2. Lay out the beef slices and divide the breadcrumb mixture evenly among them, spreading it out in a thin layer.
  3. Roll up each slice of beef tightly, starting at one end and tucking in the sides to create a neat cylinder. Secure each roll with a toothpick or kitchen twine.
  4. In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic and sauté for 2-3 minutes until softened.
  5. Add the beef rolls to the skillet and brown them on all sides, about 2-3 minutes per side.
  6. Add the crushed tomatoes, red wine, oregano, salt, and black pepper to the skillet. Bring the sauce to a simmer, then reduce the heat to low and cover the skillet.
  7. Cook the braciole in the sauce for about 1 hour, until the beef is tender and the sauce has thickened.
  8. Remove the toothpicks or twine from the beef rolls and serve them hot, with the sauce spooned over the top.
