Ful medames



Ful medames is a popular Egyptian breakfast dish made with fava beans that are cooked and mashed, then topped with olive oil, lemon juice, and various toppings such as chopped tomatoes, onions, and herbs. It is often served with bread or pita for dipping.

Here is a recipe for ful medames:

Ingredients:

  • 1 cup dried fava beans
  • 4 cups water
  • 1 garlic clove, minced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Toppings (optional): chopped tomatoes, onions, parsley, cilantro, cumin, or hot sauce

Instructions:

  1. Soak the fava beans in water overnight, or for at least 6 hours. Drain and rinse them well.
  2. In a large pot, bring the water to a boil, then add the fava beans and garlic. Reduce the heat to medium-low and let the beans simmer for 1-2 hours, or until they are very soft and tender.
  3. Mash the beans with a potato masher or fork, or use an immersion blender for a smoother consistency.
  4. Season the ful medames with salt and pepper to taste, and stir in the olive oil and lemon juice.
  5. Serve the ful medames hot, topped with any desired toppings such as chopped tomatoes, onions, parsley, cilantro, cumin, or hot sauce.
  6. Serve with bread or pita for dipping.

Ful medames can also be made with canned fava beans for a quicker preparation. If using canned fava beans, rinse and drain them well, then heat them up in a saucepan with garlic, olive oil, and a little bit of water until they are heated through and tender.
