Aloo paratha

Aloo Paratha is a popular Indian flatbread made with a stuffing of spiced mashed potatoes. It is a breakfast dish that is enjoyed with yogurt, pickle, or chutney. Here is a recipe to make it at home:

Ingredients: For the dough:

  • 2 cups whole wheat flour
  • 1/2 tsp salt
  • Water, as needed

For the filling:

  • 3 large potatoes, boiled and mashed
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1/2 tsp cumin seeds
  • 1/2 tsp coriander powder
  • 1/4 tsp garam masala
  • Salt to taste
  • Oil or ghee, for cooking

Instructions:

  1. In a large mixing bowl, add the whole wheat flour and salt. Mix well.
  2. Add water as needed and knead the dough until it is smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
  3. In another mixing bowl, add the mashed potatoes, chopped onion, green chilies, cumin seeds, coriander powder, garam masala, and salt. Mix well.
  4. Divide the dough into equal-sized balls and flatten them slightly. Take one ball and dust it with flour. Roll it out into a small disc.
  5. Place a spoonful of the potato filling in the center of the disc. Bring the edges of the disc towards the center to enclose the filling and seal it well.
  6. Dust the stuffed ball with flour and roll it out gently into a round paratha.
  7. Heat a griddle or tawa over medium heat. Once hot, place the rolled paratha on it. Cook for a minute or so, then flip and cook the other side.
  8. Apply some oil or ghee on the paratha and cook both sides until golden brown and crispy.
  9. Repeat the process for the remaining dough balls and filling.
  10. Serve hot with yogurt, pickle, or chutney.
