Coquilles Saint-Jacques, or “Saint James’ scallops,” is a classic French dish that features scallops baked in a creamy white wine sauce and topped with bread crumbs and cheese. Here is a simple recipe to make Coquilles Saint-Jacques at home:

Ingredients:

  • 8 large scallops, cleaned and patted dry
  • 2 tablespoons of butter
  • 1/4 cup of white wine
  • 1/4 cup of heavy cream
  • 1/4 cup of grated Gruyere cheese
  • 1/4 cup of bread crumbs
  • 1 tablespoon of fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Melt the butter in a large skillet over medium-high heat.
  3. Add the scallops and sear for 1-2 minutes on each side until golden brown. Remove from the skillet and set aside.
  4. Pour the white wine into the skillet and stir to deglaze the pan, scraping up any browned bits from the bottom.
  5. Add the heavy cream to the skillet and bring to a simmer.
  6. Add the grated Gruyere cheese and stir until melted and combined.
  7. Season with salt and pepper to taste.
  8. Place the scallops in a baking dish and pour the creamy white wine sauce over them.
  9. In a small bowl, mix the bread crumbs and chopped parsley together, and sprinkle over the scallops.
  10. Bake in the preheated oven for 8-10 minutes, or until the bread crumbs are golden brown and the sauce is bubbling.
  11. Remove from the oven and let cool for a few minutes before serving.
