Pide



Pide is a traditional Turkish flatbread that is often described as a cross between pizza and bread. It is typically boat-shaped and topped with various ingredients such as cheese, meat, vegetables, and herbs. Here’s a basic recipe for making Pide:

Dough Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 cup warm water
  • 2 tablespoons olive oil

Topping Ingredients (you can customize the toppings to your preference):

  • 1 cup grated cheese (such as mozzarella or feta)
  • 1/2 cup diced tomatoes
  • 1/2 cup sliced bell peppers
  • 1/4 cup sliced red onions
  • 1/4 cup sliced black olives
  • Fresh herbs (such as parsley or mint), chopped
  • Salt and pepper, to taste

Instructions:

  1. In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5 minutes, or until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix the ingredients together until a dough forms. Knead the dough on a lightly floured surface for about 5-7 minutes, or until it becomes smooth and elastic.
  4. Place the dough in a greased bowl and cover it with a clean kitchen towel. Allow it to rise in a warm place for about 1 hour, or until it doubles in size.
  5. Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to preheat as well.
  6. Once the dough has risen, divide it into 2 or 4 equal portions, depending on the size of the pides you want to make.
  7. Roll out each portion into an oval or boat shape, about 1/4-inch thick.
  8. Transfer the rolled dough onto a baking sheet lined with parchment paper, or onto a preheated pizza stone if you have one.
  9. Spread the desired toppings evenly over the dough, leaving a small border around the edges. You can be creative with the toppings and use a combination of cheese, vegetables, and meat.
  10. Season the toppings with salt and pepper to taste, and sprinkle the fresh herbs on top.
  11. Bake the pides in the preheated oven for about 12-15 minutes, or until the edges are golden brown and the cheese is melted and bubbly.
  12. Remove the pides from the oven and let them cool slightly before serving.
