Chicken biryani



Chicken biryani is a delicious and popular dish in South Asian cuisine. It is a rice-based dish that is made with aromatic spices, basmati rice, and chicken pieces. Here’s a basic recipe for chicken biryani:

Ingredients:

  • 2 cups basmati rice
  • 2 pounds bone-in chicken pieces
  • 1 large onion, sliced
  • 1/2 cup plain yogurt
  • 2 tablespoons ginger garlic paste
  • 2 teaspoons garam masala powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 3 cups water
  • 3 tablespoons oil or ghee
  • Saffron strands (optional)
  • Fried onions for garnish (optional)

Instructions:

  1. Wash the basmati rice and soak it in water for at least 30 minutes.
  2. In a large pot, heat oil or ghee over medium heat. Add sliced onions and sauté until golden brown.
  3. Add chicken pieces and cook until the chicken is no longer pink. Add ginger garlic paste and cook for another minute.
  4. Add yogurt, garam masala powder, turmeric powder, cumin powder, coriander powder, red chili powder, and salt to the pot. Mix well and cook for another 5-7 minutes.
  5. Drain the soaked rice and add it to the pot. Mix well.
  6. Add water and bring the mixture to a boil. Lower the heat and let it simmer until the rice is cooked and the water has been absorbed.
  7. If using saffron, soak a few strands in warm milk and pour over the biryani. Cover the pot with a tight-fitting lid and let it rest for 10-15 minutes.
  8. Garnish with fried onions (if using) and serve hot.
